Today I post the recipe for peach jam, I prepared it yesterday afternoon and this morning I already spread it on rusks for breakfast. Homemade jam is one of the best things in the world and it takes nothing more than the desire to eat something much higher than what is sold in stores and 1 hour of time to make it. Actually, browsing my recipe book for preserves I noticed that a distinction is made between jams and marmalades. The first indicates only preparations made with citrus fruits, while for all other types of fruit we must speak of jam. Even though I know I'm wrong (there is even a European legislation that indicates this difference: S) I will continue to call it jam: /

How to make peach jam

Choose firm and healthy peaches to make the jam.

Clean and rinse the peaches well, peel them, throw away the stone and cut into small pieces in a bowl.

Put the peaches in a saucepan, add the sugar and lemon juice.

Put the saucepan on the stove and bring to a boil, stirring often. If a little foam starts to form, remove it with a slotted spoon.
Already after 30 minutes you can test the saucer to check the cooking: pour a few drops of jam on a saucer and let it cool. If holding the saucer vertically the jam does not run, it is ready, otherwise continue cooking for another 10 minutes.

Sterilize the glass jars without the cap by placing them for 15 minutes in the oven at 100 ° C or 5 minutes in the microwave with water inside.
As soon as the peach jam is ready, still boiling, pour into the jars with a ladle up to about 1 cm from the edge.

Close the jars and turn them upside down, so as to create the vacuum and so that the cap is also sterilized with the heat.

Let the jam jars cool upside down. After about an hour the peach jam is ready.
