Separate the egg white from the yolk, then mix the egg white well until it becomes a glossy foam. Add the sugar gradually, stirring constantly. The flour is mixed with the baking powder then gradually incorporated into the composition obtained, mixing with the paddle from bottom to top slightly, until well incorporated.

In a tray (I used my 45/35 cm tray) put baking paper, put the composition, then place the pitted cherries. Put the tray in the oven heated to 180 degrees and leave for about 35-40 minutes. When it is well browned, take it out of the oven, let it cool, then powder it with powdered sugar.
